Creamy Potato n’ Chives
  • 1kg potatoes, peeled & chopped
  • ¾ cup Sanitarium So Good Lite soymilk
  • 125g light cream cheese
  • 1 teaspoon salt
  • ¼ cup chopped chives

Topping

  • 4 crushed Sanitarium Weet-Bix
  • 1 tablespoon margarine, melted

Prep Time:        20 mins

Cook Time:        30 mins

Serves:              6

1. Place potatoes in a saucepan with water. Bring to boil and then simmer over
gentle heat until tender. Drain.
2. Add So Good, cream cheese and salt. Mash well.
3. Stir through chives.
4. Spoon into a lightly greased 18cm ovenproof dish.
5. Combine topping ingredients and sprinkle over potato.
6. Bake in a moderate oven, 180˚C, for 25-30 minutes or until heated through
and golden brown.
